Timmy's Spinach & Oyster Soup

A rich and creamy soup that highlights two Louisiana favorites — fresh oysters and spinach. Perfect as a starter or a light meal. ~Timmy Credeur

Servings: 8

Ingredients:

  • 2 small boxes frozen spinach
  • 5 oz sour cream
  • 4 tablespoons butter
  • 2½ cups milk
  • 2 cups cream of chicken soup
  • ½ cup shallots, chopped
  • ¼ teaspoon white pepper
  • 2 jars oysters, drained
  • 2 chicken bouillon cubes
  • Salt and pepper to taste

Directions:

  1. Drain and chop spinach. Mix with sour cream and butter, then set aside.
  2. In a separate pot, combine milk, cream of chicken soup, shallots, and white pepper. Stir and cook on medium heat for 20 minutes.
  3. Stir in the spinach mixture and cook for 15 minutes on medium heat.
  4. Add oysters. Simmer for 15 to 20 minutes. Salt to taste and serve.
