Timmy's Spinach & Oyster Soup
A rich and creamy soup that highlights two Louisiana favorites — fresh oysters and spinach. Perfect as a starter or a light meal. ~Timmy Credeur
Servings: 8
Ingredients:
- 2 small boxes frozen spinach
- 5 oz sour cream
- 4 tablespoons butter
- 2½ cups milk
- 2 cups cream of chicken soup
- ½ cup shallots, chopped
- ¼ teaspoon white pepper
- 2 jars oysters, drained
- 2 chicken bouillon cubes
- Salt and pepper to taste
Directions:
- Drain and chop spinach. Mix with sour cream and butter, then set aside.
- In a separate pot, combine milk, cream of chicken soup, shallots, and white pepper. Stir and cook on medium heat for 20 minutes.
- Stir in the spinach mixture and cook for 15 minutes on medium heat.
- Add oysters. Simmer for 15 to 20 minutes. Salt to taste and serve.
