Shrimp and Sausage Stuffed Bell Peppers

Tamesha Derouen sent this one in, and it's a full Louisiana treatment of stuffed peppers — two pounds of Italian sausage, two pounds of shrimp, and the pepper halves boiled in crab boil before they ever see the oven. Three seasonings on the shelf and you use all of them.

Ingredients

  • 2 lbs Italian sausage
  • 2 lbs medium shrimp, peeled and deveined
  • 6 bell peppers, halved and seeds removed
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 tablespoons garlic, minced
  • 3 tablespoons butter
  • ⅔ cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup Italian breadcrumbs
  • 2 tablespoons crab boil
  • Green onions, optional, for topping
  • Tony Chachere's Creole Seasoning, to taste
  • Season-All, to taste
  • Slap Ya Mama Cajun Seasoning, to taste

Instructions

  1. Brown the sausage. Brown the Italian sausage in a large pot, then remove the sausage from the pot.
  2. Sauté the vegetables. Add the butter to the pot. Sauté the chopped bell pepper, onion, celery, and garlic until softened.
  3. Cook the shrimp. Add the shrimp to the vegetables and cook until the shrimp are pink and cooked through.
  4. Add the broth. Add the chicken broth and cook for a few minutes.
  5. Return the sausage. Add the cooked Italian sausage back to the pot.
  6. Finish the filling. Add the Parmesan cheese and Italian breadcrumbs. Turn off the heat and stir until the mixture is well combined.
  7. Boil the peppers. Bring a large pot of water to a boil and add the crab boil. Add the halved bell peppers and boil for 5 minutes, then remove and drain.
  8. Prepare the pan. Spray a roasting pan with nonstick cooking spray.
  9. Stuff the peppers. Stuff each bell pepper half generously with the sausage and shrimp mixture and place in the prepared roasting pan.
  10. Bake. Bake at 350°F for 20 minutes.
  11. Serve. Top with chopped green onions before serving, if desired.
