Rina's Microwave Pralines

An easy praline recipe where you don't have to stand there and stir for hours — and Rina says they taste very good. Thirteen minutes in the microwave, a quick stir, and onto foil.

Ingredients

  • 1 pound light brown sugar
  • 8 ounces whipping cream
  • 6 tablespoons butter
  • 2 cups pecan halves
  • 2 teaspoons vanilla

You'll Also Need

  • A 4-quart microwave-safe bowl
  • Aluminum foil

Directions

  1. In a 4-quart bowl, mix the cream and sugar and stir until smooth.
  2. Microwave on high power for 13 minutes.
  3. Meanwhile, cut the butter into small cubes and set aside.
  4. Carefully remove the bowl from the microwave and quickly stir in the butter, vanilla, and pecans.
  5. Stir until it loses its shine and becomes kind of dull. This takes only a few seconds.
  6. Quickly drop 1–2 tablespoons at a time onto aluminum foil. If you use anything but aluminum foil, they will not set.

Rina's Tips

  • High humidity will cause pralines not to set properly.
  • Aluminum foil isn't optional — they won't set on anything else.
