Kim Vo's Tiramisu

I'm particular about raw eggs, so I searched until I found a tiramisu recipe with cooked egg yolk. This is it — and it's amazing. I can control the alcohol level, and it's indulgent enough to enjoy any time. ~Kim Vo

Prep Time: 30 mins | Cook Time: 5 mins | Servings: 12

Ingredients:

  • 6 large egg yolks
  • ¾ cup white sugar
  • ⅓ cup milk
  • 1¼ cups heavy cream
  • ½ teaspoon vanilla extract
  • 1 lb mascarpone cheese, at room temperature
  • ¼ cup strong brewed coffee, at room temperature
  • 2 tablespoons rum
  • 2 (3 oz) packages ladyfinger cookies
  • 1 tablespoon unsweetened cocoa powder

Directions:

  1. Whisk together egg yolks and sugar in a medium saucepan until well blended.
  2. Whisk in milk and cook over medium heat, stirring constantly, until mixture comes to a boil.
  3. Boil gently for 1 minute, remove from heat, and let cool slightly. Cover and refrigerate for 1 hour.
  4. Beat heavy cream and vanilla with an electric mixer until stiff peaks form.
  5. Remove egg yolk mixture from the refrigerator, add mascarpone, and whisk until smooth.
  6. Combine coffee and rum in a small bowl. Split ladyfingers lengthwise and drizzle with coffee mixture. Arrange half in the bottom of a 7x11-inch dish.
  7. Spread half the mascarpone mixture over the ladyfingers, then spread half the whipped cream on top. Repeat layers.
  8. Dust cocoa powder over the top. Cover and refrigerate for 4–6 hours until set.
