Kim Vo's Tiramisu
I'm particular about raw eggs, so I searched until I found a tiramisu recipe with cooked egg yolk. This is it — and it's amazing. I can control the alcohol level, and it's indulgent enough to enjoy any time. ~Kim Vo

Ingredients:
- 6 large egg yolks
- ¾ cup white sugar
- ⅓ cup milk
- 1¼ cups heavy cream
- ½ teaspoon vanilla extract
- 1 lb mascarpone cheese, at room temperature
- ¼ cup strong brewed coffee, at room temperature
- 2 tablespoons rum
- 2 (3 oz) packages ladyfinger cookies
- 1 tablespoon unsweetened cocoa powder
Directions:
- Whisk together egg yolks and sugar in a medium saucepan until well blended.
- Whisk in milk and cook over medium heat, stirring constantly, until mixture comes to a boil.
- Boil gently for 1 minute, remove from heat, and let cool slightly. Cover and refrigerate for 1 hour.
- Beat heavy cream and vanilla with an electric mixer until stiff peaks form.
- Remove egg yolk mixture from the refrigerator, add mascarpone, and whisk until smooth.
- Combine coffee and rum in a small bowl. Split ladyfingers lengthwise and drizzle with coffee mixture. Arrange half in the bottom of a 7x11-inch dish.
- Spread half the mascarpone mixture over the ladyfingers, then spread half the whipped cream on top. Repeat layers.
- Dust cocoa powder over the top. Cover and refrigerate for 4–6 hours until set.
