Jason Stoner's Golden Lobster Bites with Saffron Aioli and Caviar

Ingredients:
Lobster Bites:
- 3 lobster tails
- 2 tablespoons Old Bay Seasoning
- 1 stick butter, divided in half
- 1 lemon, juiced and zested
- 2 bay leaves
- Edible gold leaf for garnish
Lemon Saffron Aioli:
- 1 pinch saffron threads
- 1 tablespoon hot water
- 2 egg yolks
- 1 small clove garlic, minced
- 4 teaspoons fresh lemon juice
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- ¼ cup extra virgin olive oil
Caviar Topping:
- 1 oz high-quality caviar (such as Beluga or Osetra)
Directions:
Lemon Saffron Aioli:
- Steep saffron threads in hot water for 5 minutes.
- In a food processor or blender, combine saffron water, egg yolks, garlic, lemon juice, salt, and pepper. Blend on high until combined.
- With processor running, slowly drizzle in olive oil until aioli is thickened. Refrigerate until ready to serve.
Lobster Bites:
- Bring a pot of water to a boil with Old Bay, lemon juice, lemon peel, and half a stick of butter. Add lobster tails and cook no more than 2 minutes. Remove and place in an ice water bath to stop cooking.
- Remove lobster meat from tails and cut into 1-inch rounds.
- Melt remaining half stick of butter with bay leaves and a touch of minced garlic. Simmer (do not boil). Add lobster bites and finish cooking for 1–2 minutes.
- To serve, place a dollop of saffron aioli on a small plate or serving dish. Arrange lobster bites on top, apply gold leaf with a brush, and finish with a small dollop of caviar.
