Jason Stoner's Garlic Mushroom Toasts with Bacon & Manchego Cheese

A medley of tender sautéed mushrooms flavored with garlic and fresh herbs, piled onto crisp golden toast points and finished with melted, nutty Manchego cheese. A rich and satisfying bite that your guests will love. ~Jason Stoner

Ingredients:

  • 4–5 slices bacon, chopped
  • 1 lb mixed mushrooms
  • 4 cloves garlic, minced
  • Black pepper to taste
  • ¼ cup fresh parsley, chopped
  • 8 slices baguette or rustic bread
  • 1 cup grated Manchego cheese

Directions:

  1. Place chopped bacon in a skillet and brown over medium-low heat.
  2. Add mushrooms, minced garlic, and black pepper. Cook for 5–7 minutes until mushrooms are tender and slightly golden.
  3. Stir in chopped parsley and remove from heat.
  4. Preheat oven to 400°F. Arrange bread slices on a baking sheet and drizzle with olive oil. Bake for 5–7 minutes until crispy and golden.
  5. Top each toast with a generous spoonful of the garlic mushroom mixture and sprinkle with Manchego cheese.
  6. Return to the oven for 2–3 minutes until cheese is melted and bubbly. Serve warm.
