Easy Dumpling Soup

Amber Rowlen's answer to a busy weeknight when nobody's making a real meal. Frozen dumplings, a carton of broth, and a handful of things off the shelf. Under ten minutes and endlessly customizable.

Ingredients

  • 1½ cups Asian-style broth (Trader Joe's Miso-Ginger works great)
  • 8 to 10 frozen dumplings
  • Dash of soy sauce
  • Dash of black vinegar
  • 1 teaspoon chili oil
  • ½ teaspoon umami seasoning
  • Furikake seasoning, to taste
  • Hot sauce, to taste
  • ½ tablespoon fried garlic
  • Chopped cilantro

Instructions

  1. Heat the broth. Pour the broth into a saucepan and begin heating over medium to high heat.
  2. Add the dumplings. Add the frozen dumplings so they warm through as the broth heats.
  3. Season. Bring to a low simmer and add the soy sauce, black vinegar, and umami seasoning.
  4. Transfer. After 4 to 5 minutes of a simmer, turn off the heat and transfer to a large bowl.
  5. Finish. Add the chili oil, furikake, hot sauce, and fried garlic. Lime juice to taste if you like.
  6. Garnish. Top with cilantro.

Recipe Notes

  • From Amber: this is an easy and comforting, and low calorie, meal I enjoy on nights when everyone is busy and I'm not making a large meal. Easy to customize and add things you enjoy. Noodles are a great addition if you want more carbs.
