Crawfish Opelousas

Angela Kershaw's whole-dinner-in-the-rice-cooker. Everything but the broth goes in together, the broth goes over the top, and you close the lid and leave it alone. Her words: an easy yummy dinner all in one pot.

Ingredients

  • 1 lb crawfish or shrimp
  • 1 stick butter, melted
  • 2 medium onions, chopped
  • 4 cloves garlic, chopped
  • 1 can sliced mushrooms, drained (Angela uses the big can)
  • 1 can (14 oz) chicken broth
  • 1 bell pepper, chopped
  • 1½ cups washed rice
  • Onion tops and parsley
  • Season to taste

Instructions

  1. Mix everything. In a large bowl, or your rice pot, mix everything thoroughly except the chicken broth.
  2. Load the cooker. Put the mixture into the rice cooker and distribute evenly.
  3. Add the broth. Pour the chicken broth over the mixture.
  4. Cook. Cover and cook like you would cook a pot of rice. Don't open it during cooking.
  5. Serve. Once it's done, fluff it up and serve.
