Cajun Chicken & Sausage Alfredo

A rich, Cajun-spiced twist on a classic Alfredo — golden chicken, browned smoked sausage, and spaghetti all tangled up in a creamy Parmesan sauce with a bright hit of lemon. Comfort food, Acadiana style.

Ingredients:

  • 2–4 boneless, skinless chicken breasts
  • 1 lb smoked sausage
  • 1 lb spaghetti noodles
  • 6 tbsp olive oil
  • 2 tbsp garlic, minced
  • 2½ cups low-sodium chicken broth
  • 4 tsp fresh lemon juice
  • 3 cups heavy cream
  • 2 cups grated Parmesan cheese
  • ½ bunch fresh parsley, chopped
  • Cajun seasoning, to taste

Directions:

  1. Boil the spaghetti noodles according to the box instructions; drain and set aside.
  2. Heat the olive oil in a nonstick pan over medium heat, then add the chicken. Season with Cajun seasoning and cook 6–7 minutes per side, until golden brown. Remove and set aside. Add the sliced smoked sausage to the pan and brown, then pull and drain. Cut the chicken into thin strips or bite-sized pieces.
  3. Add the garlic and sauté for 3 minutes. Deglaze the pan with the chicken broth, add the fresh lemon juice, and bring to a boil for just a minute. Quickly reduce the heat back to a low simmer.
  4. Add the heavy cream and grated Parmesan cheese, stirring until everything is well combined and the sauce begins to thicken.
  5. Sprinkle some fresh parsley into the sauce, then add the cooked pasta, sausage, and chicken. Serve it up warm with some Caesar salad and bread. Baw, dat's good, yeah!
