Timmy's Crawfish Étouffée
Ingredients:
- ½ lb. margarine
 - 1 c. chopped onions
 - 1 c. chopped celery
 - 1 c. chopped bell pepper
 - 4 cloves garlic, chopped
 - 1 sm. can tomato sauce
 - 1 tsp. red pepper
 - 2 chicken bouillon cubes
 - 1 T. roux
 - 1 T. paprika
 - 2 c. water
 - ½ stick butter
 - 2 T. cornstarch
 - ½ c. green onions
 - 2 lbs. crawfish tails
 
Directions:
Sauté margarine with onions, celery and bell pepper; add tomato sauce, red pepper, chicken cubes, water and roux. Add crawfish, then let cook on medium fire for 40 minutes. Add paprika. Mix cornstarch and water then add; cook until thick then add butter and green onions.
