Katy's Curried Chicken
You need this recipe in your arsenal. It's been a favorite of ours for 28 years. I call it mine now because I've altered the original Gita's from our clay cooker recipe book. That might be part of the lusciousness of the clay cooker. We got one and the cookbook as a wedding gift and have used it often. You can substitute a covered casserole dish for it if you don't have one. ~Katy Richard
Ingredients:
- 1 cup onion chopped fine
- 2 tbl EEVO
- 2" piece fresh ginger, peeled & grated on a zester
- 1 cup canned whole tomatoes & juice crushed (I pour a 28 oz whole can in a bowl and mash with my hands. Then measure out a cup.)
- 4-5 cloves garlic, minced
Curry Spice Mix (Measure into a bowl. I do this while the cooker soaks.)
- 1 tsp salt
- 1 rounded tsp ground coriander
- 1 rounded tsp cumin
- 1/2 tsp paprika
- 1/4 tsp smoked paprika
- 3/4 tsp ground turmeric
- 1/4 rounded tsp cayenne
- 1/4 tsp ground cinnamon
- 1/8 tsp ground clove
- 1/4 tsp curry powder
- 1/4 tsp chili powder
- 2 fresh bay leaves (or 1 dried)
- 3 lb. boneless skinless chicken thighs, about 12
Directions:
- Soak the top & bottom of a 2 - 3 1/4 qt clay cooker in water for 15 minutes, drain
- Heat oil in a pan.
- Sauté ginger & garlic cook, stirring constantly for 2 minutes.
- Stir in onion and cook just until beginning to brown. Reduce heat and stir in spices. Cook for 2 minutes. Add tomatoes, and stir until well combined. Remove from heat.
- Place chicken in cooker, add onion mixture mix. I put one layer in first, add some tomato mixture, then top w another layer of chicken and the remaining curry mix.
- Place the covered cooker in a cold oven. Set oven to 450º,
- Bake until chicken is tender for 1 hour.
- Serve with saffron rice and a side vegetable, like carrots or green beans. Our favorite is mashed potatoes. Lately, it's been mashed carrots and sweet potatoes combined.
The serving size is two thighs and gravy & is 345 calories. I figured it all out!
