Ingredients
For the Lobster Filling: 2 lobsters, cooked 1/3 cup celery diced 1/4 cup green onions or chives, sliced thin (green parts only) 1/4 teaspoon Old Bay Seasoning 1 teaspoon Louisiana Hot Sauce 2 tablespoons Duke’s Mayonnaise black pepper to taste zest of one small lemon juice from half a lemon For the Buns: New England Style Buns, or a nice brioche hot dog style bun Graze Acadiana EVOO 2 cloves of garlic, cut into half shortwise Garnishing Options: green onions chives fresh tarragon
Instructions
Preheat the oven to 450 degrees. For the Lobster Filling: Start by preparing all your ingredients. Dice the celery, thinly slice the green onions, zest the lemon, and break down the lobster tail and claws. Mix together the lobster, celery, green onions, Old Bay Seasoning, Louisiana Hot Sauce, Dukes Mayonnaise, black pepper to taste, lemon zest, and lemon juice in a bowl. Cover and refrigerate. For the Buns: Split the buns if they are not already split—do not cut all the way through. Place the buns on a baking sheet lined with parchment and brush with Graze Acadiana’s EVOO of choice. Place in the oven and toast for about 8 minutes. Remove the buns from the oven and rub the cut side of each garlic clove all over the toasted bread, infusing it with a wonderful garlic flavor! Serving: Fill each bun generously with the lobster salad mixture, then garnish with any of the options. Enjoy!
