Jason Stoner's Garlic Mushroom Toasts with Bacon & Manchego Cheese

Ingredients:

  • 4-5 slices of bacon, chopped
  • 1 lb mixed mushrooms
  • 4 cloves garlic, minced
  • Black pepper, to taste
  • 1/4 cup chopped fresh parsley
  • 8 slices of baguette or rustic bread
  • 1 cup grated Manchego cheese

Directions:

  1. Place chopped bacon in a skillet and brown on medium-low heat.
  2. Add the mushrooms, minced garlic, and black pepper to taste—cook for 5-7 minutes until they are tender and slightly golden.
  3. Stir in the chopped parsley and remove from heat.
  4. Preheat the oven to 400°F (200°C). Arrange the bread slices on a baking sheet and drizzle with the remaining 1 tablespoon of olive oil. Bake for 5-7 minutes, or until the bread is crispy and golden.
  5. Top each toast with a generous spoonful of the garlic mushroom mixture, and sprinkle with grated Manchego cheese.
  6. Return the toast to the oven for 2-3 minutes, or until the cheese is melted and bubbly. Serve warm.
