Jason Stoner's Garlic Mushroom Toasts with Bacon & Manchego Cheese
These savory and aromatic Garlic Mushroom Toasts with Manchego Cheese are a delightful addition to any tapas spread. Ingredients:
- 4-5 slices of bacon, chopped
- 1 lb mixed mushrooms
- 4 cloves garlic, minced
- Black pepper, to taste
- 1/4 cup chopped fresh parsley
- 8 slices of baguette or rustic bread
- 1 cup grated Manchego cheese
Directions:
- Place chopped bacon in a skillet and brown on medium-low heat.
- Add the mushrooms, minced garlic, and black pepper to taste—cook for 5-7 minutes until they are tender and slightly golden.
- Stir in the chopped parsley and remove from heat.
- Preheat the oven to 400°F (200°C). Arrange the bread slices on a baking sheet and drizzle with the remaining 1 tablespoon of olive oil. Bake for 5-7 minutes, or until the bread is crispy and golden.
- Top each toast with a generous spoonful of the garlic mushroom mixture, and sprinkle with grated Manchego cheese.
- Return the toast to the oven for 2-3 minutes, or until the cheese is melted and bubbly. Serve warm.
